How Gen Z & Millennials Are Redefining Dining
Feb 14, 2025
From Snacking to Sustainability, What Drives Younger Diners?
Consumer habits are evolving rapidly, with Gen Z and Millennials leading the transformation of the restaurant industry. These insights were highlighted in the State of the Restaurant Industry 2025 webinar, presented by the National Restaurant Association.
With these two generations now outnumbering Gen X and Baby Boomers by 8 million, their preferences are reshaping restaurant operations, menu offerings, and marketing strategies. Their demand for convenience, seamless technology integration, and sustainability is setting new standards for foodservice in 2025.
Snacking Overtakes Traditional Meals
One of the most significant shifts in dining behavior is the rise of snacking. Nearly 70% of younger consumers are replacing traditional meal structures with smaller, more frequent eating occasions. This change has fueled growth in quick-service and snack-centric concepts while challenging full-service restaurants to adapt. Breakfast and late-afternoon snacking have seen a surge, prompting operators to expand offerings that cater to these evolving habits.

Tech-Driven Dining: Digital Ordering and Delivery Dominate
For Gen Z and Millennials, technology is a critical component of their dining experience. Digital ordering, AI-driven recommendations, and loyalty app engagement are now expected. Off-premises dining continues to expand, with takeout, delivery, and drive-thru transactions accounting for nearly 75% of total restaurant traffic—up from 61% pre-pandemic. Additionally, the rise of blended meals, where consumers integrate restaurant-prepared items into home-cooked dishes, underscores the demand for flexible and convenient dining solutions.

Sustainability Matters: The Rise of Eco-Friendly Dining
Environmental responsibility is a key consideration for younger consumers when choosing a restaurant. They actively seek brands that prioritize sustainability, from reducing food waste to using eco-conscious packaging and sourcing locally. Restaurants that effectively communicate their green initiatives—both in-store and across digital platforms—gain a competitive advantage in attracting these environmentally aware diners.
As Gen Z and Millennials continue to influence the future of foodservice, operators must adapt to their expectations by leveraging technology, rethinking meal structures, and prioritizing sustainability. Staying ahead in this shifting landscape requires a keen understanding of evolving consumer behaviors.
